ABOUT
Famous for their previous spectacular undertakings, the investor (Food hall Browary)) and the owner of Browary Warszawskie (ECHO Investments) were on a lookout for a designer who would go beyond the challenges posed by the need to reconcile what is required by the conservator with what is needed by the F&B businesses. They wanted someone who knew how to design the spirit of a soon-to-be model modern investment, likely to get international hype in less than no time. Piotr Maciaszek (architect and partner at NOKE Architects) sums it up by saying "We love demanding projects and working on tailor-made solutions”.

The open floorplan enhances the spirit of togetherness and camaraderie, allowing guests to move freely between the various gastronomic stations and social spaces. Here, strangers become friends, and the boundaries between food and drink, history and modernity, blur delightfully.
VENTYLATION
How to ensure proper ventilation throughout the expansive space while preserving the historical integrity of the brewery's ceiling? Ingenious engineering minds rose to the occasion, conceiving an innovative ventilation system that seamlessly blends into the surroundings. Discreetly installed in the interstitial spaces of the ancient brewery ceiling, a network of state-of-the-art ductwork and fans tirelessly work to maintain a comfortable and fresh atmosphere for the visitors. Careful consideration was given to preserving the original architecture, resulting in a ventilation solution that remains practically invisible.
BRICK ARCHES
FOOD COURTS
The designers’ objective was to freshen up the standard idea of a food court. Piotr Maciaszek confirms that they “prioritized coherence, consistency and the original simplicity of design in order to prevent overstimulation or stylistic cacophony”. Under three beautiful brick arches inherited from the lagering cellar top class international chefs and mixologists reign over 11 industrial stainless steel stalls, collectively injecting magic into this pioneer premium street food space.
CENTRAL BAR
At the heart of the cellar stands a magnificent centre piece, the crown jewel of this captivating space—the central bar. Majestically stretching across the floor plan, this bar holds the distinction of being one of the longest in the entire city, an architectural feat that commands attention and admiration. Crafted by skilled artisans, the bar boasts custom-made bottle shelves meticulously carved from reclaimed metal, showcasing an impressive collection of spirits from far and wide. Illuminating the grand spectacle from above is a mesmerizing glass chandelier, a stunning work of art in its own right. This dazzling creation, reminiscent of a cascading waterfall of light, is meticulously hand-made by master glass artist, infusing the space with a warm and inviting glow.
Thanks to NOKE Architects Warsaw may boast another retrieved monument of unquestionable qualities. Old lagering cellar of the Warsaw Brewery has become the place to be in the capital, where the best foods and drinks meet the best design.
MATERIALS
Drawing inspiration from the essence of beer itself, the design of the food hall thoughtfully weaves a tapestry of materials that pay homage to the brewer's art. Warm wood, reminiscent of the oak barrels where beer aged to perfection, dominates the interior, exuding a rustic charm that harks back to the brewery's origins. The sturdy cooper fixtures, carefully incorporated into the décor, mirror the copper brewing kettles that once toiled here, adding a touch of industrial elegance to the space. Natural stone, reminiscent of the earth from which the finest ingredients are harvested, graces the walls and floors, grounding the ambiance in a sense of authenticity and solidity. And like the captivating hue of amber that resonates with the most prized brews, glass fixtures of the same hue adorn the space, diffusing a warm and inviting glow that envelops visitors like the gentle embrace of a cherished libation. Together, these materials come alive, narrating the story of beer's legacy while harmoniously blending with the food court, bars, and historical elements.
FURNITURE AND DETAILS
To complete the captivating allure of the interior, no detail was spared, even down to the bespoke furniture design. Masterful artisans crafted custom-made pieces, skillfully integrating solid wood elements reminiscent of the old brewing stands into the very fabric of the venue. Each table and seating arrangement pays homage to the brewery's heritage, with reclaimed wood surfaces showcasing the natural imperfections that tell a story of time and tradition. Ingeniously, some tables are fashioned from vintage brewing stands, lovingly restored to serve a new purpose as platforms for gastronomic delights and social gatherings. The result is a seamless fusion of history and contemporary elegance, as patrons revel in the splendour of the old brewery cellar, where every element, from the ceiling to the floor and every inch in between, bears witness to the enduring spirit of craftsmanship and the passion for the art of brewing.
TECHNICAL DRAWING
NOKE Architects gave Warsaw foodies a chance to contemplate the mastery of the staff, deciding on open kitchens and a truly gigantesque cocktail bar with a stone countertop and an exquisite chandelier ornamented with hundreds of glass plates. Add the intimate wine bar with classy copper rings, the welcoming lodges of the nerve-soothing chill out lounge overlooking the green courtyard and the DJ on the stage at night and you know you are in an urban gourmet paradise.
